Japan is the last place you'd think to find gigantic portions of food, but you'll be surprised to hear that many restaurants offer food challenges! Sometimes what you've given just isn't enough, right? Best of all, if you eat it all within a certain amount of time, it's usually free!

John Daub and Kai Okudara head to Iidabashi Station and the Kagurazaka Hanten (神楽坂飯店) restaurant known for its jumbo gyoza and other food challenges. It's a 10 min walk from the Tokyo Dome or 1 stop on the Oedo Line subway.
Most people notice the challenge in the display window. It looks almost like a joke! It's ridiculously big.

THE CHALLENGE:
★ Jumbo Gyoza / 2.5kg. / 60 minutes / ¥9600
★ Triple Jumbo Ramen / 3.2kg. / 60 minutes / ¥1890
* It's free if you complete the challenge
* Jumbo Gyoza should be ordered 2 days in advance
* Enter the Wall of Fame if you complete the challenge

Why are food portions in Japanese usually small?
We talk about the Japanese concept of mottainai もったいない which means "take only what you need" and "don't waste"
This concept runs deep with Japanese and is followed closely with almost every citizen.

Kagurazaka Hanten started this challenge 45 years ago as a PR stunt for students. It was a way to get them in to the restaurant in groups and have fun. Today, the restaurant is featured often on Japanese TV as Japanese talent test the limits of their stomachs.

Have you seen the movie Ponyo (Ponyo on the Cliff by the Sea)?

This video will show you how to make 3-Minute Instant Chicken Ramen with ham that Ponyo and Sōsuke ate :)

Instant ramen can be cooked by pouring hot water or in a pot.

How to Make Ponyo Ramen Noodles

Difficulty: Very Easy
Time: 3 min
Number of servings: 1

Ingredients:
1 package Nissin Chicken Ramen
400ml boiling water
1 slice cooked ham (cut in half) *use thick one if available
1/2 hard boiled egg
chopped green onion

Directions:
1. Boil the water.
2. Place the noodles in a ramen bowl. Pour boiling water over the noodles and cover. Set and start your timer for three minutes
3. After the first minute, quickly open, shake the noodles to separate, then arrange the ham, egg, and green onion over the noodles. Cover again and wait until the timer beeps.

If you don't have a noodle bowl with a lid, you can cover the bowl with a plate!

Healthy Ramen Recipe

1. Add Protein- protein will balance out the high amount of carbs in the noodles.
- Chicken
- Steak (Beef)
- Pork
- Seafood
- Tofu

2. Add Vegetables- Ramen from packages typically are missing nutrients so adding vegetables adds a depth of health that make this a more balanced meal or snack.
- Onions
- Bell peppers
- Mushrooms
- Broccoli
- Carrots
- Cabbage
- Herbs
- Bean Sprouts

3. Reduce Sodium (Salt)- Packaged Ramen often of a high amount of sodium and the quality of sodium is not desirable for a healthy balanced diet. Cut out half the flavor packets and substitute it with spice (hot peppers or hot sauce) or your own high quality Sea Salt when eating.

Healthy Ramen Recipe

This is a great recipe but takes a long time to prepare.

I guess a better name would be Tonkotsu somen noodels since I could not get the right ones. But the broth is awsome.

I did not show it but adding some of the Nibuta broth is a very good idea.

I took ten pounds of pigs feet that had already been split put them in a big pot of water. Soaked them for two hours changed the water. Put them on a burner when they started to boil boiled them for 30 minutes. Dumped the water washed the pot and the bones. Put them back in the pot with 1 one inch piece of ginger and five cloves of garlic. Brought them to a slow boil for twenty hours. About every hour I would skim off any foam and fat. After the time had ended I removed the bones and strained liquid. It is now ready to use.

I had to put the Nibuta pork in another vid due to time limit.

It takes 60 hours to make this creamy Tonkotsu (pork bone) soup.

Tonkotsu ("pork bone") ramen is usually white. It is similar to the Chinese baitang (白湯) and is a thick broth made with crushed pork bones that have been boiled for hours. It is a specialty of Kyūshū and is often served with beni shoga (pickled ginger).

The Dotch Cooking Show (どっちの料理ショー Dotchi no Ryōri Shō?) (April 17, 1997 - March 17, 2005) was a Japanese cooking show produced by the Yomiuri Telecasting Corporation and known for its use of highest quality and most expensive food ingredients domestic and international to Japan. In the show, two chefs prepare two competing dishes, each using a special premium ingredient, but the dish that is ultimately served at the end of the show is determined by majority vote of the panelists, and then served only to those who voted for that dish. The show is continued by the New Dotch Cooking Show (新どっちの料理ショー Shin Dotchi no Ryōri Shō?) from April 14, 2005.
