 Other than regular cooking videos are going (viewers' request), I started ASMR? cooking video series. On this series, it won't be viewer's request. Anything I want to make. Whether you like this or not, let me do this once in a while. Btw I got this idea from your comments in the last video (accidental upload). So thank you for your advice and I will really appreciate if you keep giving me any advice how I can make ''Better'' ASMR? cooking video series in the future.

Curry Rice (curry and rice / kare-raisu) is a very popular dish in Japan. According to the statistics, we Japanese eat curry rice twice a month!

When I made the Basic Curry Rice, some people asked me for the vegetarian version, so I decided to make this video. The product I used contains no animal product but it tastes quite similar to the regular ones =) My darling and I are not vegetarian but we enjoyed it a lot!!!

This curry uses well-selected spices. Not hot but mild and tasty.

I bought this curry roux at an organic supermarket called "Kodawariya (こだわりや)". I hope you can get it when you come to Japan or when you find it somewhere else.

Vegetarian Curry Rice

Difficulty: Easy
Time: 30min
Number of servings: 4

Ingredients:
1/2 bag (80g=2.8oz.) vegetarian curry roux
1 small (150g=5.3oz.) onion
1 medium (150g=5.3oz.) potato
1/2 (100g=3.5oz.) carrot
1 tbsp. cooking oil
500ml water
4 servings of cooked rice

Directions:
1. Cut onion, potato, and carrot into bite-size pieces.
2. Heat cooking oil in a large stew pot. Add the cut vegetables and stir-fry them until slightly coated with oil.
3. Add 300ml water, bring to a boil, remove the foam, then turn the heat down to medium and cook for about 15 minutes.
4. In a small bowl, mix vegetarian curry roux and 200ml water.
5. Turn off the heat, add the curry roux mixture into the pot, and mix well. *make sure you stop the heat when you add the curry roux, otherwise it thickens very quickly.
6. Then put on low and simmer for a little while.
7 Serve curry on a hot bed of rice.

*if you have leftover curry roux, store it in the fridge and use within a week.

How to Make Vegetarian Curry Rice

Today in Moto's Kitchen, we're making a rice burger. Along the same lines as the ramen burger, envision taking one of your favorite dishes, chicken teriyaki and rice and putting it in a burger form. Delicious and portable! So please try out this new take on the burger and let us know how it is!

Ingredients:
Cooked Rice (Japanese short-grain rice preferred)
Onions
Eggs
Ground Chicken
Shiso leaves
Starch
Cooking Oil
Salt
Pepper
Sugar
Soy Sauce

1. Preparation

Patty:
Start with a pound of ground chicken in a bowl then mix in chopped onions, an egg and chopped shiso leaves (about ten leaves). Shiso leaves will add a subtle basil flavor. Now add the seasoning which consists of salt, pepper (we used white pepper, but black pepper can be used as well), a tsp of soy sauce, tsp of sugar, and a tbsp of starch (corn or potato starch). Mix the seasoning thoroughly with the ingredients until it becomes very sticky, that's when you'll know the mixture is ready.

Rice bun:
Next we make the rice buns. Start with a cup of cooked rice in a bowl. It is important to do this process quickly. Sprinkle about a tbsp of starch, this will act as the binder. Next you want to add a pinch of salt for taste and sprinkle in sesame as well. Mix thoroughly so the starch can act as a glue for the rice, but do avoid mashing the rice. Now we will make the bun shape. Using saran wrap, place a desired portion of the rice mixture down. With another piece of saran wrap over top, begin molding the rice into the familiar bun shape. You're looking for the rice to be packed fairly tightly to ensure it will stay together. Peel the saran wrap away and now you have your first bun. Repeat the process with the saran wrap to make the other half of your bun.

2. Cooking

Now we will cook the patty. Start by heating the pan then add a little bit of oil. Scoop out the chicken mixture from the bowl (we used a ice cream scoop so it forms an even shape) and place it on the pan. Using the spatula, push down the meat into the pan so it will cook evenly. Cook each side for about five minutes (this may vary depending on the size of your patty). After both sides are fully cooked, we will add in the teriyaki sauce mixture, which consists of two tbsp of soy sauce, sake, mirin and sugar. Glaze both sides of the chicken patties with the sauce, making sure they thoroughly absorb the mixture.

3. Plating

Create your burger! You may use any burger ingredients you have such as lettuce or tomato. In this video, shiso leaves are added instead of lettuce, but feel free to adapt to your own tastes. Enjoy your rice burger!

Tips:
- Japanese short-grain rice is generally stickier than common long-grain rice and sushi rice. So definitely use it to make rice burger buns if it is available to you.
- Similar to sake, mirin is also a kind of Japanese rice wine. However, it is lower in alcohol and sweeter than regular sake. It will add a nice aroma and hint of sweetness to your dish.

Takikomi Gohan is flavored steamed rice. Gomoku means the rice is cooked with 5 ingredients.

The recipe is very easy! You just cut ingredients and cook in a rice cooker. It's my darling's favorite dish!!!

Tuna Gomoku Takikomi Gohan

Difficulty: Easy
Time: 5min + rice cooking time
Number of servings: 4

Necessary Equipment:
suihanki (Japanese rice cooker)

Ingredients:
2 cups uncooked Japanese rice (short-grain rice)
80g (3oz.) tuna in oil
50g (1.7oz.) carrot
5g (0.2oz.) sliced dried shitake mushrooms
100g (3.5oz.) takenoko (bamboo shoots)
1 abura-age (fried tofu)
A
* 2 tbsp. Nagasawake Sauce **
* 1 tbsp. sake

Directions:
1. Wash rice and leave for about 30 minutes.
2. Soak dried shiitake mushrooms in water until they become soft (or microwave for 2 minutes). Pour hot water over the abura-age (fried tofu) and wrap in paper towel to remove any excess water. Cut carrot, takenoko (bamboo shoots), and fried tofu into short and thin strips.
3. Place the rice and water (to the correct water level) in a Japanese rice cooker, then add A and tuna with its oil, and mix well. Put shitake mushrooms, fried tofu, carrot and takenoko on top and close the cooker and switch it on.
4. When it's done, don't open and leave it for about 10 minutes to blend the flavor.
5. Open, mix well, and serve!

** You can substitute Nagasawake Sauce with 50cc 3 times concentrated Yamasa Konbu Tsuyu
