This is a great recipe but takes a long time to prepare.
I guess a better name would be Tonkotsu somen noodels since I could not get the right ones. But the broth is awsome.
I did not show it but adding some of the Nibuta broth is a very good idea.
I
took ten pounds of pigs feet that had already been split put them in a
big pot of water. Soaked them for two hours changed the water. Put them
on a burner when they started to boil boiled them for 30 minutes. Dumped
the water washed the pot and the bones. Put them back in the pot with 1
one inch piece of ginger and five cloves of garlic. Brought them to a
slow boil for twenty hours. About every hour I would skim off any foam
and fat. After the time had ended I removed the bones and strained
liquid. It is now ready to use.
I had to put the Nibuta pork in another vid due to time limit.
